BORAGE - cucumber flavored leaf & flower sprays

CULTURE: Easily germinated from seed, but a bit difficult to transplant. Plant seed outdoors May - June in rows, or in rock gardens. Sow @ 4 seeds per in/25 mm; 1/4 in/6 mm deep, cover with fine soil and firm. Thin seedlings 12 in/31 cm apart. Space rows 2.5 ft/76 cm apart, give them plenty of room, as they are base branching plants. Mature plants grow about 3 ft/91 cm high and self seed quite easily once established. Choose a light, dry soil with lots of sun.
HARVEST: Pick the leaves and use fresh to flavor iced summer drinks or harvest leaves in September, dry and store in a jar.
USES: Leaves are used with pickles, cool drinks or as "greens". Plants attract pollinators and the beautiful blue flowers can be candied.
