These are a quick and easy appetizer. My friend gave me this recipe and I have used it numerous times in a pinch. They are yummy little bites.

Ingredients

  • cooking spray

  • 1 (8 ounce) package cream cheese, softened

  • ¾ cup shredded Cheddar cheese

  • cup salsa

  • 1 green onion, finely chopped

  • 1 tablespoon garlic powder

  • 1 teaspoon white sugar

  • 2 eggs

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray mini muffin cups with cooking spray.

  2. Mix cream cheese, Cheddar cheese, salsa, green onion, garlic powder, and sugar together in a bowl. Add eggs and mix well; spoon into the prepared muffin cups.

  3. Bake in the preheated oven until each taco bite is set in the middle, about 15 minutes.
