Jose's Shrimp Ceviche

I've searched everywhere and can't find a better shrimp ceviche! My friends love it and always beg for the recipe. Double it for larger parties—it disappears fast. Serve with tortilla chips or on a tostada spread with mayo. The fearless palate might like it with hot sauce!

Ingredients

  • 1 pound peeled and deveined medium shrimp

  • 1 cup fresh lime juice

  • 10 plum tomatoes, diced

  • 1 large yellow onion, diced

  • 1 jalapeño pepper, seeded and minced, or to taste

  • 2 avocados, diced (Optional)

  • 2 ribs celery, diced (Optional)

  • chopped fresh cilantro to taste

  • salt and pepper to taste

Directions

  1. Place shrimp in a large glass or other non-reactive bowl, and cover with lime juice to marinate (or 'cook') until they turn pink and opaque, about 10 minutes.

  2. Meanwhile, place plum tomatoes, onion, jalapeño, avocados, and celery in separate large glass or other non-reactive bowl.

  3. Remove shrimp from lime juice, reserving juice. Dice shrimp and add to bowl of vegetables. Add reserved lime juice marinade, cilantro, and salt and pepper to taste. Toss gently to combine.
