This is a quick and tasty oatmeal recipe that I've really enjoyed. Even my daughter who doesn't like oatmeal will eat this right up!

Ingredients

Original recipe (1X) yields 1 servings

  • ¾ cup water

  • ¼ cup steel-cut oats (such as Trader Joe's® Quick Cook Oats)

  • 1 tablespoon natural peanut butter (such as Whole Foods 365 Organic Everyday Value®)

  • 1 tablespoon maple syrup

  • ½ teaspoon brown sugar

Directions

  1. Bring water to a boil in a saucepan, stir steel cut oats into water, and reduce heat to medium-low. Cover and cook until oats are tender, 5 to 7 minutes, stirring occasionally. Remove from heat and let stand 1 minute.

  2. Stir peanut butter, maple syrup, and brown sugar into oats.

Cook's Note:

Depending on the brand of peanut butter, the taste will obviously vary. I tried an all natural peanut butter from Trader Joe's(R) that I simply did not like. The 365(R) Whole Foods brand tastes much better in my opinion. You could also try adding some cinnamon if desired.
