Ingredients

Original recipe (1X) yields 6 servings

  • ½ cup unsalted butter, diced, more for the dish

  • 5 pounds red potatoes, thinly sliced

  • 1 onion, finely chopped

  • 6 slices bacon, chopped

  • salt and pepper to taste

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch casserole dish.

  2. Place potatoes in an even layer in the dish. Sprinkle onion and bacon over potatoes, then dot with diced butter. Cover the dish with foil.

  3. Bake in the preheated oven for 45 minutes. Remove the foil and stir potatoes. Turn oven to broiler setting and brown until potatoes are crisp, about 5 minutes. You may need to stir every minute or so for even browning. Serve immediately.
