Ingredients

Original recipe (1X) yields 4 servings

  • 2 (10.5 ounce) cans chickpeas, drained

  • 2 tablespoons red onion, chopped

  • 2 cloves garlic, minced

  • 1 tomato, chopped

  • ½ cup freshly chopped parsley

  • 3 tablespoons olive oil

  • 1 tablespoon lemon juice

  • salt and pepper to taste

Directions

  1. Combine chickpeas, red onion, garlic, tomato, parsley, olive oil, and lemon juice in a large bowl; season with salt and pepper to taste.

Cook’s Note
