Possibly the zombies' big advantage is that they're dead; they're not like normal contsructs, they can't bleed or whatever.... or if they do it doesn't hurt them the way it would a construct. If you tore them apart like Von Pinn did Adam and Lilith, would it hurt the zombies as much, or would you get a talking head, or a hand crabwalking along?
