“Ratatouille. It's like a stew, right? Why do they call it that? If you're gonna name a food, you should give it a name that sounds delicious. Ratatouille doesn't sound delicious. It sounds like "rat" and "patootie." Rat patootie! Which does not sound delicious.”
Ratatouille is the dish which Remy and the rat clan made to food critic, Anton Ego, who luckily happened to have loved the dish in his early childhood, and happily ate the dish at Gusteau's. Soon after people realized that rats were present in the kitchen, the restaurant was closed due to infestation. Ego also lost his job and credibility as a restaurant critic, and was instead made an investor to Remy's own personal restaurant, La Ratatouille, where he would almost always ask for this dish. The name of the dish was first spoken in the movie by Linguini whilst drunk.

The name comes from the French words "ratouiller" and "tatouiller" which means "to stir up". In other words, its name basically means "something stirred up"; most likely referring to the fact that the dish is essentially a mish mash of various vegetables that is cooked in its own sauce.
The ratatouille Remy makes in the film is actually a variant known as confit byaldi, to make the food look tasty and delicious, compared to the traditional version. The traditional version appears shortly in a flashback scene.
Colette Tatou considered ratatouille to be a "peasant's dish".
In Kingdom Hearts III, ratatouille is one of the recipe dishes served at Le Grand Bistrot in Twilight Town. The dish temporarily raises Sora's team max HP/MP.
