Ingredients

Original recipe (1X) yields 8 servings

  • 1 tablespoon onion powder

  • 1 tablespoon garlic granules

  • 1 tablespoon sweet and spicy paprika

  • 1 tablespoon white sugar

  • 1 tablespoon ground coriander

  • 1 1/2 teaspoons salt

  • 1 1/2 teaspoons dried oregano

  • 1 1/2 teaspoons dried parsley

  • 2 pounds sweet potatoes, cut into bite-sized pieces

  • 1 tablespoon olive oil

Directions

  1. Preheat the oven to 425 degrees F (225 degrees C). Stir onion powder, garlic granules, paprika, sugar, coriander, salt, oregano, and parsley together in a small bowl; set seasoning aside.

  2. Add sweet potatoes to a large bowl or resealable plastic bag. Add the oil; sprinkle in about 1 tablespoon seasoning. Toss to coat potatoes. Extra seasoning can be stored in an airtight jar.

  3. Bake in the preheated oven until tender, about 25 minutes.
