Line a baking sheet with parchment paper or aluminum foil. Scrub potatoes and pat dry with a paper towel. Prick potatoes with a fork or sharp knife about 5 times. Rub potatoes all over with oil and salt which will crisp the skin while baking. Place on the prepared baking sheet. Bake in the preheated oven until soft inside, about an hour. Test for doneness by gently squeezing with an oven mitt, or pierce with a knife or fork to see if there’s any resistance.
