Whole Roasted Sweet Potatoes

Sweet potatoes are a great source of fiber and vitamins, are low in fat, and tasty prepared either savory or sweet. Roasting them whole is the easiest, no-fuss, simplest way to prepare them. A few suggestions for toppings are butter, cinnamon sugar, caramelized onions, shredded cheese, honey, nuts, maple syrup, and sour cream and chives.

Ingredients

Original recipe (1X) yields 4 servings

  • 4 sweet potatoes

  • 1 tablespoon vegetable oil

  • 1 teaspoon sea salt

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or aluminum foil.

  2. Scrub potatoes and pat dry with a paper towel. Prick potatoes with a fork or sharp knife about 5 times. Rub potatoes all over with oil and salt which will crisp the skin while baking. Place on the prepared baking sheet.

  3. Bake in the preheated oven until soft inside, about an hour. Test for doneness by gently squeezing with an oven mitt, or pierce with a knife or fork to see if there’s any resistance. If there is, back into the oven for another 10 to 15 minutes (See Cook’s Note below for a cooking time guide).

  4. Slice the top of the potato, fluff the inside with a fork, add whatever toppings you like, and serve immediately.

Cook's Note:

Cooking time depends on the shape and size of your sweet potatoes. If your potatoes are small, up to 2-1/2 inches wide, check for doneness in about 45 minutes. If they’re medium, 2-1/2 to 3 inches in diameter and about 6 to 9 ounces, figure about an hour. If large, about 3 to 3-1/2 inches or 1 pound, allow about an hour and 15 minutes.
