Ingredients

Original recipe (1X) yields 4 servings

  • ½ cup olive oil

  • 1 small white onion, sliced into thin wedges

  • 1 (14.5 ounce) can diced tomatoes, undrained

  • 2 medium zucchini, sliced

  • 1 tablespoon salt

  • 1 ½ teaspoons Italian seasoning

  • 1 teaspoon sugar

Directions

  1. Heat olive oil in a skillet over medium heat. Stir in onion and cook until tender, 5 to 7 minutes. Mix in tomatoes and zucchini; season with salt and Italian seasoning. Cook and stir until zucchini is tender, 7 to 10 minutes. Mix in sugar and adjust seasonings to taste.
