This coulis is easy to make with fresh raspberries. It's so full of flavor and delicious poured over ice cream, crêpes, or cheesecake. If your raspberries are extra tart, add a bit more sugar.

Ingredients

Original recipe (1X) yields 8 servings

  • 2 cups raspberries, rinsed and drained

  • 2 tablespoons white sugar, or more to taste

  • 1 teaspoon lemon juice

Directions

  1. Combine raspberries, sugar, and lemon juice in the bowl of a small food processor. Blend until smooth and sugar has dissolved, 15 to 20 seconds. Adjust sugar if desired, and blend again.

  2. Strain mixture using a fine mesh strainer to remove seeds and get a smoother consistency. Refrigerate until ready to use.

Cook’s Note

 The coulis is also delicious mixed into sparkling water, champagne, or a cocktail!
