Poppy seed chicken is an excellent way to use up leftover chicken. This is served up at our house at least once a month. We like it with mashed potatoes or rice and a green vegetable.

Ingredients

Original recipe (1X) yields 6 servings

  • 5 cups chopped cooked chicken

  • 1 (10.5 ounce) can condensed cream of chicken soup

  • 1 cup sour cream

  • 1 ½ cups crushed buttery round crackers

  • ½ cup unsalted butter, melted

  • 1 teaspoon poppy seeds

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Place chicken in a 9x13-inch baking dish. Combine condensed soup and sour cream in a medium bowl; pour over chicken.

  3. Stir crushed crackers, melted butter, and poppy seeds together in a separate bowl; sprinkle over chicken and sauce.

  4. Bake in the preheated oven until top is browned and sauce is bubbly, about 30 minutes.
