Knowing that I was going to be taking this to work, I thought it would be easier to make into mini brownie cupcakes. But, as I tried to add the toppings to the little cupcakes, I decided that I should have just stuck to making them in the pan. I did have leftover batter, so I put it into a small pan and made those the way I was supposed to. In the end, the cupcakes turned out fine, and everyone at work thought they were cute and delicious. Helpful (4) Blueberry Cherry Pie 03/11/2012 I made this pie for Thanksgiving, and it was perfect. I did prepare it differently, cooking the filling on the stove, like I usually do when I make a cherry pie. I used corn starch instead of flour, and brought the mixture to a low boil, it thickened right up, and then I poured it into the crust. I also added 1/4 tsp almond extract to the filling, just as a personal preference. The filling was not runny, but also not dry. Everyone really enjoyed the pie, and I know that I will be making it again. Helpful (6) Lemon Cake 03/11/2012 I love the soft texture of this cake. I use this as a base recipe for all other boxed cake mixes. I use the water, eggs or egg whites and the cake mix. I like this better than using the traditional ingredients. I make this cake all of the time, but have only made the frosting one time. I usually just make my homemade vanilla frosting and add some lemon extract to it. Great cake! Helpful (1) Blueberry Crumb Pie 03/10/2012 I much prefer crumb toppings to a double crusted pie. My kids and I just went blueberry picking and came home with 8 pounds of fresh blueberries. This was a perfect recipe to start using them. Pie is already gone and I can't wait to make another!
