Original recipe (1X) yields 6 servings 1 head cauliflower 6 cloves garlic, peeled ¼ cup plain yogurt ¼ cup grated Parmesan cheese 3 tablespoons chopped fresh parsley 3 tablespoons extra-virgin olive oil ¼ teaspoon garlic powder ¼ teaspoon garlic salt ¼ teaspoon ground black pepper Directions Combine cauliflower and garlic cloves in a pot and cover with water. Bring to a boil; boil until cauliflower is tender, 10 to 15 minutes. Drain water. Blend cauliflower and garlic in a food processor. Add yogurt, Parmesan, parsley, oil, garlic powder, garlic salt, and pepper and blend again. Adjust seasonings to individual taste. Cook's Notes: May need more seasonings depending on the size of cauliflower. Add more Parmesan for a nuttier and thicker taste.
