Ingredients

  • 1 tablespoon Greek seasoning

  • 1 teaspoon grated lemon zest

  • salt and ground black pepper to taste

  • 2 large potatoes, cut into wedges

  • 2 tablespoons olive oil

  • 2 ounces feta cheese, crumbled

  • 2 tablespoons chopped fresh mint

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).

  2. Mix Greek seasoning, lemon zest, salt, and pepper together in a small bowl.

  3. Spread potatoes into a single layer on a baking sheet; drizzle with oil and stir until coated. Sprinkle seasoning mixture evenly over top.

  4. Bake in the preheated oven until tender when pierced with a fork, about 20 minutes.

  5. Remove from the oven and immediately sprinkle feta cheese and mint over top.
