Original recipe (1X) yields 12 servings 3 pounds potatoes, peeled and cubed 3 cups hot water ½ cup fresh lemon juice ⅓ cup vegetable oil 1 tablespoon olive oil 1 ½ teaspoons dried oregano 2 teaspoons salt ½ teaspoon ground black pepper 2 cloves garlic, minced ¼ cup chopped fresh parsley Directions Preheat oven to 475 degrees F (245 degrees C).
