These mini salmon cakes for one (or two small eaters) only need salmon, egg, onion, and a few staples. Mix it all up, shape into patties, and you are ready to go!

Ingredients

Original recipe (1X) yields 1 servings

  • 1 small onion, diced

  • 1 (6 ounce) can salmon, drained and flaked

  • 8 crackers, crushed, or more to taste

  • 1 egg, beaten

  • 1 tablespoon butter, softened

  • 1 tablespoon lemon juice

  • 1 teaspoon ground black pepper

  • 3 tablespoons vegetable oil

Directions

  1. Mix onion, salmon, crackers, egg, butter, lemon juice, and black pepper together in a bowl; form into 4 patties.

  2. Heat oil in a skillet over medium heat; fry patties in hot oil until crispy and golden brown, about 5 minutes per side.

Cook’s Note

Adjust the number of crackers for personal taste: more crackers equal less salmon taste, fewer mean stronger salmon taste!

I use olive oil rather than vegetable oil.

Substitute the onion with 1 teaspoon onion powder, if desired.
