This is my Aunt Ro's recipe for baked beans. It's closer to chili than baked beans, and it's great for a potluck or BBQ.

Ingredients

Original recipe (1X) yields 6 servings

  • 8 ounces bacon

  • 1 pound ground beef

  • ½ cup chopped onion

  • 2 (15.5 ounce) cans butter beans, drained and rinsed

  • 2 (15 ounce) cans baked beans with pork

  • 2 (12 ounce) cans pinto beans, drained and rinsed

  • 1 cup barbecue sauce

  • 1 cup ketchup

  • 1 cup packed brown sugar

Directions

  1. Cook bacon in a large, deep skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels; crumble and set aside. Discard grease.

  2. Cook ground beef and onion in the same skillet over medium heat, stirring until beef is no longer pink, 5 to 7 minutes; drain. Transfer mixture to a slow cooker.

  3. Add baked beans with pork, butter beans, pinto beans, barbecue sauce, ketchup, and brown sugar to the slow cooker; stir to combine. Cover; cook on High for 4 hours. Top servings with bacon.
