Ingredients

Original recipe (1X) yields 2 servings

  • 1 cup baby spinach leaves

  • 1 large tomato, sliced 3/4-inch thick

  • 1 ball fresh mozzarella cheese, sliced

  • 2 tablespoons chopped fresh basil

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon extra-virgin olive oil

Directions

  1. Arrange spinach on a serving plate; top with tomato slices. Top each tomato slice with 1 slice fresh mozzarella. Sprinkle basil over salad; drizzle with balsamic vinegar and olive oil.
