July 2024 I try a lot of recipes I find online and this is one of my favorites.. i love pickled beets but I hate canning them. What a mess. This recipe took all the braindamage out of prepping the beets it and i thought they were delicious (so did my neighbor and he is very fussy). So easy to make, so sweet and spicy. What a treat!! Celery and onions are low acid ingredients. Tomatoes are just barely acidic enough on their own, so to be safe we add lemon juice. When you combine the large amounts of low acid vegetables (3onions & a bunch of celery!) to the tomatoes it changes the acidity enough that you can get very very sick! It might not happen the first time or the twenty third but botulism is nothing to be la-de-da about. It only takes once to kill you! It is delicious and has a great balance of salty and sweet with a kick of pepper. I didn’t have meat tenderizer so I used a squirt of lemon juice instead.
