Bread
We make our handcrafted bread with organic flours from Lindley Mills in Graham, North Carolina, and from Carolina Ground in Asheville. Our traditional hearth loaves include both naturally leavened (sourdough) and yeasted varieties, all made without the use of preservatives. The use of preferments provides longer fermentation times that allow flavors to develop. Our French baguettes are made according to authentic, Old World recipes, and every loaf is shaped by hand. Pan loaves such as 7 grain, and Wonderful white bread make great toast and tasty sandwiches. We make a variety of rolls and bagels each day, and we make Irish soda bread, hot cross buns, and stollen seasonally. We bake our bread fresh daily.
Our bread bakers consistently strive to improve our breads with a focus on grains that are good for nutrition, environment, and climate. Most recently our bread staff created new Kernza bread. Kernza® is a perennial grain called intermediate wheat-grass. It improves soil health, so it is not just good for the environment and climate, but also for your healthy diet. Read more here.
Pastry
Our extensive selection of pastries ranges from early morning muffins to mid-day cookies to late night pie. Our team of bakers makes everything by hand: buttery croissants, moist chocolate brownies, delectable tarts, and scrumptious frosted cakes, including some vegan selections. We use local eggs, milk, and cream as well as locally milled organic flour and the freshest seasonal fruits. Our traditional recipes and time-honored methods produce pastries that taste homemade.
