Original recipe (1X) yields 4 servings Vinaigrette: 1/4 cup white wine vinegar 2 teaspoons Dijon mustard 2 teaspoons honey 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/2 cup olive oil Salad: 6 cups fresh baby spinach and arugula 1/2 cup torn fresh basil leaves 1/2 cup torn fresh Italian parsley leaves 1/4 small red onion, thinly sliced (optional) 1 cup sliced fresh strawberries Directions In a small bowl, whisk vinegar, Dijon, honey, salt, and pepper. Gradually add olive oil and whisk until well blended; set aside. (As an option, If you have a small food processor, blend all dressing ingredients except olive oil until well combined. With motor running, stream in olive oil, and blend until emulsified, about 30 seconds.) In a large bowl, combine spinach and arugula, basil, parsley, and red onion, if using. Fold in strawberries, drizzle with vinaigrette to taste, toss until well combined, and serve. Cook’s Note We all have different taste preferences when it comes to the amount of dressing on a salad. Just add what suits you, save the rest for another day, and refrigerate in a jar with a tight-fitting lid. If you like white balsamic vinegar, it’s a good sub for the white wine vinegar in the dressing.
