This is a very simple sausage and green beans recipe that tastes great. Put your beans on early in the morning, and let them cook all day. My grandma, who came from a poor family, handed down this recipe. Goes great with cornbread.

Ingredients

Original recipe (1X) yields 8 servings

  • 2 pounds fresh green beans, trimmed

  • 4 cups water, or more as needed

  • 1 teaspoon salt, or to taste

  • 8 potatoes, peeled and quartered

  • 1 pound smoked sausage, cut into bite-sized pieces

Directions

  1. Place green beans in a large saucepan with a lid. Pour water over beans to cover; stir in salt. Bring to a boil over medium heat, reduce heat to low, cover, and simmer until beans are very tender, 3 to 4 hours; add water throughout cooking as needed to keep moist.

  2. Add potatoes and smoked sausage; cover and simmer until potatoes are very tender and beans and potatoes have absorbed the smoky flavor of sausage, about 2 more hours.
