Submitted by lutzflcat Updated on January 26, 2022 Save Rate Print Share Close Add Photo Prep Time: 15 mins Total Time: 15 mins Servings: 8 Yield: 8 chicken salad sandwiches Jump to Nutrition Facts Cook Mode (Keep screen awake) Ingredients Dressing: 3 tablespoons olive oil 1 tablespoon red wine vinegar 1 teaspoon Dijon mustard 1 teaspoon hot honey (such as Mike's Hot Honey®) salt and freshly ground black pepper to taste Chicken Salad: 2 cups cooked, shredded chicken 2 (1/4 inch thick) slices lightly toasted French bread, cut into very small cubes 2 small tomatoes on the vine, diced 1 small onion, thinly sliced 2 tablespoons minced celery 2 tablespoons chopped cilantro 10 small pimento-stuffed olives, halved 8 mini croissants Directions Whisk together olive oil, red wine vinegar, Dijon mustard, hot honey, salt, and pepper in a small bowl until well combined; set aside. Add chicken, bread cubes, tomatoes, onion, celery, cilantro, and olives to a large bowl; mix well. Drizzle dressing over the chicken mixture, and stir until well combined. Taste and adjust seasonings, if necessary. Slice croissants in half, fill with chicken salad, and serve. Cook's Note: The hot honey is optional in this recipe. I usually use Campari(R) tomatoes, but cherry tomatoes also would work well in this.
