Vegan Banana Whipped Iced Coffee

One of the latest raves are whipped coffees. We are on lockdown because of the Coronavirus so I spend a lot of my time playing games and flavoring these whipped coffees. Here is my latest creation.

Ingredients

  • 1 cup coconut milk beverage (such as Silk®)

  • 1 banana

  • 1 (1 gram) packet stevia sweetener

  • ice cubes

  • ¼ cup boiling water

  • 1 tablespoon instant coffee granules

  • 1 tablespoon white sugar

Directions

  1. Combine coconut milk beverage, banana, and sweetener in a blender; blend until smooth. Fill a large glass with ice and pour pureed banana milk on top.

  2. Combine boiling water, coffee granules, and sugar in a tall container. Whip with an immersion blender or a hand mixer until foamy, about 2 minutes. Pour coffee foam over the banana milk.

Cook's Notes:

For a stronger coffee flavor, use equal amounts of water, coffee granules, and sugar (or Stevia(R).

Coconut milk beverage is found in the refrigerator section of your market and is not the same as canned coconut milk. You can use another plant-based milk instead.
