These lace cookies are one of my favorite recipes passed down to me by my grandmother. Friends and family love them — they are irresistible!

Ingredients

Original recipe (1X) yields 10 servings

  • parchment paper

  • ½ cup butter

  • ¾ cup white sugar

  • 1 large egg, beaten

  • 1 cup quick cooking oats (such as Quaker)

  • 3 tablespoons all-purpose flour

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

  • ¼ teaspoon baking powder

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.

  2. Heat butter in a microwave-safe bowl in the microwave until melted.

  3. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla, salt, and baking powder.

  4. Drop teaspoonfuls of dough onto the prepared baking sheet, leaving plenty of room to spread.

  5. Bake in the preheated oven until edges are golden brown, about 8 minutes.

  6. Let cool completely before removing cookies from the foil.

If you don't have parchment paper, you can line a baking sheet with aluminum foil and grease with cooking spray.
