These easy endive, cranberry, and walnut appetizers are excellent, quick, and always a hit! Cranberry or walnut balsamic vinegar is great in this recipe!

Ingredients

Original recipe (1X) yields 10 servings

  • 3 heads endive, washed, dried, and separated into individual leaves

  • cup crumbled blue cheese

  • cup sweetened dried cranberries (such as Craisins)

  • cup glazed walnuts

  • 2 tablespoons balsamic vinegar, or to taste

Directions

  1. Arrange endive leaves on a serving tray.

  2. Combine blue cheese, cranberries, and walnuts in a bowl; spoon a small amount in each leaf. Drizzle with balsamic vinegar.

Cook's Notes:

You can use goat cheese or gorgonzola cheese in place of blue cheese.

If you want to roast the walnuts, arrange nuts in a single layer on a baking sheet; roast for 10 minutes in a 400 degrees F (204 degrees C) preheated oven.
