Submitted by Sara Updated on August 19, 2024 Save Rate Print Share Close Add Photo 5 5 5 Prep Time: 15 mins Cook Time: 30 mins Total Time: 45 mins Servings: 10 Jump to Nutrition Facts Cook Mode (Keep screen awake) Ingredients ½ pound chorizo sausage, chopped ¼ cup olive oil 2 carrots, chopped 1 cup chopped onion 5 stalks celery, chopped 5 tomatoes, chopped 3 small potatoes, peeled and chopped 3 quarts chicken broth 1 ½ tablespoons cayenne pepper 1 (15 ounce) can kidney beans, drained ½ cup tomato paste salt and pepper to taste Directions Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Heat oil in a stockpot over medium-high heat. Add carrots, onion, and celery; cook and stir for 2 to 3 minutes. Add tomatoes, potatoes, kidney beans and chicken broth. Bring to a boil and stir in cayenne pepper and tomato paste. Reduce heat and simmer for 20 minutes. Add sausage and season with salt and pepper to taste. Serve hot.
