Submitted by phdsunflower Updated on November 4, 2024 Save Rate Print Share Close Add Photo Prep Time: 20 mins Cook Time: 40 mins Total Time: 1 hr Servings: 8 Jump to Nutrition Facts Cook Mode (Keep screen awake) Ingredients 1 tablespoon olive oil 1 ⅓ pounds sausage links, cut into bite-sized pieces 2 medium carrots, chopped 2 stalks celery, chopped ½ medium onion, chopped 2 cloves garlic, chopped 1 pound brown lentils 1 (28 ounce) can diced tomatoes 2 quarts chicken stock 2 large bay leaves salt and ground black pepper to taste Directions Heat oil in a large stockpot over medium heat. Add sausages and cook until they begin to brown, about 5 minutes. Remove sausages to a paper-towel-lined plate and set aside, leaving browned bits and drippings behind. Add carrots, celery, and onion to the pot. Cook until onion is soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add lentils and tomatoes. Stir to combine. Add chicken stock, bay leaves, and reserved sausages. Bring to a boil over medium-high heat. Reduce heat to medium, cover, and simmer for 25 minutes. Season with salt and pepper.
