These no-bake cookies with coconut are super yummy and super easy. The combination of chocolate, coconut, and oats is wonderful. These also freeze well.

Ingredients

Original recipe (1X) yields 24 servings

  • 3 cups quick cooking oats

  • 1 cup sweetened flaked coconut

  • 2 cups white sugar

  • ½ cup unsweetened cocoa powder

  • ½ cup milk

  • ½ cup butter

Directions

  1. Line a baking sheet with waxed paper.

  2. Mix oats and coconut in a large bowl until thoroughly combined.

  3. Stir sugar, cocoa powder, milk, and butter together in a saucepan over medium heat until smooth. Bring to a boil and cook, stirring constantly, for 2 minutes. Pour over oats and coconut; mix quickly to coat.

  4. Drop tablespoonfuls onto the prepared baking sheet. Let cookies cool and harden; store in an airtight container.
