Ingredients

Original recipe (1X) yields 4 servings

  • 1 tablespoon unsalted butter

  • 2 tablespoons olive oil

  • 4 skinless, boneless chicken breasts

  • 2 teaspoons Creole-style seasoning

  • 2 avocados, peeled and pitted

  • 1 small tomato, diced

  • 2 tablespoons finely chopped red onion

  • 1 tablespoon fresh lime juice

  • garlic powder to taste

  • salt and ground black pepper to taste

  • 4 slices pepper Jack cheese

Directions

  1. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.

  2. Heat butter and olive oil in a skillet over medium heat. Add chicken breasts; cook until no longer pink on the inside and golden brown on the outside, sprinkling each side with Creole seasoning, about 10 minutes per side.

  3. Scoop avocados into a bowl. Add tomato, onion, lime juice, garlic powder, salt, and black pepper; mash together.

  4. Spoon about 1/3 cup guacamole onto each chicken breast, top with 1 slice pepper Jack cheese; broil until cheese is melted and bubbling, 2 to 4 minutes.
