Ingredients

Original recipe (1X) yields 4 servings

  • 1 teaspoon olive oil

  • 4 skinless, boneless chicken breasts

  • ½ teaspoon onion powder

  • 1 pinch salt and ground black pepper to taste

  • 2 ripe tomatoes, sliced

  • 1 (8 ounce) package Monterey Jack cheese, cut into 10 slices

  • 2 avocados - peeled, pitted and sliced

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Warm oil in a skillet and add chicken. Season with onion powder. Cook until chicken is browned and just about done, 15 minutes. Add salt and pepper to taste.

  3. Place chicken on a cookie sheet and top each breast with 1 to 2 slices of tomato and 2 to 3 slices of cheese.

  4. Place in the preheated oven until cheese melts, 10 to 15 minutes. Remove from the oven, add 2 to 3 slices of avocado on top of each breast, and serve immediately.
