I use this Jamaican jerk dry rub to season chicken before grilling, but you also can use it on fish, steak, or just about anything else. You may want to give some away to friends because this recipe makes a lot!

Ingredients

Original recipe (1X) yields 472 servings

  • 8 cups salt

  • 5 ½ cups garlic powder

  • 4 cups white sugar

  • 4 cups cayenne pepper

  • 2 cups dried thyme leaves

  • 2 cups ground black pepper

  • 1 ½ cups allspice

  • 1 cup ground cinnamon

  • 1 cup chipotle chile powder

  • ½ cup ground cloves

Directions

  1. Mix salt, garlic powder, sugar, cayenne pepper, thyme, black pepper, allspice, cinnamon, chile powder, and cloves together in a 10-quart mixing bowl until well combined. Transfer to smaller airtight containers.
