This One Freezer Find Makes Delicious Lunches 100000x Easier

And they’re 100% teenager-approved!

As a busy, work-from-home mom to two hungry teenagers, I’m always on the hunt for meal ideas that fit my family’s grocery budget and save me time in the kitchen. Recently, on my weekly BJ’s Wholesale Club grocery run, I found a new-to-me product I decided to try: Amylu Foods’s fully-cooked Roasted Garlic with Fontina, Parmesan, & Pecorino Romano Cheese Chicken Meatballs. I was intrigued by the promise of the cheesy, roasted garlic flavor of the pre-cooked protein and pleased at the price of just $12 for a two-pound bag.

The first time I tried these Amylu chicken meatballs, I was blown away by the flavor. In addition to using antibiotic-free chicken, the pre-made meatballs contain roasted garlic and a blend of fontina, Parmesan, and pecorino romano cheeses. Meatballs have long been a meal-prep staple in our home; the idea of pre-cooked meatballs that were made from ingredients I could feel good about and would save me time in the kitchen felt like a win-win for me. Especially for make-ahead weekday lunches for my homeschooled teens, my husband, and me.

How to Use Chicken Meatballs in Lunch Meal Prep

Since trying Amylu chicken meatballs for the first time, I’ve found lots of ways to use them in lunchtime meal prep. When I need a super easy lunch, I toss the meatballs with protein pasta and marinara sauce, add in a vegetable like green beans or broccoli, and package up perfect portions of healthy pasta. The meatballs are also delicious served with rice, tzatziki dipping sauce, and sliced cucumbers for a Mediterranean-style packed lunch. 

I also like to keep these chicken meatballs in my refrigerator in a food storage container and use them for quick lunches throughout the week as well. They’re perfect for slicing up and throwing on a French bread pizza or into a quesadilla for some extra protein. And, as someone who eats a high protein diet, I’ve been known to toss them in marinara sauce and serve them with a side of cottage cheese to help hit my protein goals. Delicious on meatball subs, as part of a kebab, or even heated up as a midday snack with some hummus and veggies, these meatballs have become a lunchtime staple in my home and are loved by everyone in my house–even my 16-year-old son who is arguably my pickiest eater.
