Kirkwood’s New Bakery and Butcher Shop Opens Next Weekend on Hosea L. Williams

Evergreen Butcher and Baker swings open for grab-and-go sandwiches, danishes, sausage rolls, and plenty of meat September 21

Pastry chef Emma Schacke and butcher Sean Schacke open Evergreen Butcher and Baker on Hosea L. Williams in the heart of Kirkwood next weekend.

The Schackes, who renovated a 75-year-old building behind Arden’s Garden, expect to be open Saturday, September 21, and Sunday, September 22, from 9 a.m. to 1 p.m.

Billed as a neighborhood shop that combines “old world traditions and techniques with a modern appeal,” Evergreen’s bakery offers pain au chocolat, savory danishes and croissants using deli meats and spreads, sausage rolls, chocolate chip cookies, babka, brioche, kouign-amann, and cinnamon buns. Breads include dark nordic rye, whole wheat, country sourdough, olive loaf, and baguettes as well as porridge loaves and caraway deli rye.

Grab-and-go sandwiches and coffee will be available in the small retail shop.

“Everything is grab and go. We’ll have drip coffee and buttermilk biscuit sandwiches (made from the buttermilk resulting from our cultured butter production) in the mornings and a daily sandwich special at lunch time,” Emma Schacke tells Eater Atlanta.

Evergreen’s butchery carries charcuterie, fresh and smoked sausages, terrines, deli meats, hot dogs, and burgers, in addition to ribeye, brisket, and pork loin. The shop also sells a selection of larder, seasonal jams, cultured butter, pickles, and sandwich spreads.

Schacke says they also plan to hold pastry, sourdough, and butchery classes as well as host dinners in the future. Once a month on Tuesdays, the shop sells sourdough doughnuts in the morning.

The couple met while working at chef Robert Phalen’s One Eared Stag (OES) on Edgewood Avenue. Emma is trained in French pastry and worked as the executive pastry chef at OES. Sean worked as a sous chef at the restaurant. Prior to OES, Emma worked as the executive pastry chef at the Farmhouse in Nashville. Sean was a sous chef at Jonathan Waxman’s Nashville restaurant Adele’s, before taking a position as head butcher at Publican Quality Meats in Chicago.

Temporary hours: Thursday and Friday, 7 a.m. to 6 p.m.; Saturday and Sunday, 9 a.m. to 4 p.m.
