Ingredients

Original recipe (1X) yields 8 servings

  • 1 (16 ounce) package penne pasta

  • 2 cups shredded kale

  • 2 medium carrots, shredded

  • 1 ½ cups cherry tomatoes, halved

  • 1 cup sliced black olives, drained

  • 1 cucumber, chopped

  • 1 medium red bell pepper, chopped

  • ½ shallot, chopped

  • 1 cup Greek salad dressing

  • 2 tablespoons mayonnaise

Directions

  1. Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta well.

  2. Combine pasta, kale, carrots, cherry tomatoes, olives, cucumber, bell pepper, and shallot in a bowl. Stir together Greek dressing and mayo in a bowl and drizzle over salad. Mix until well combined.
