This potato casserole recipe has been in the family for years and is always a huge hit. Frozen hash browns can be used instead of potatoes making it really easy to prepare, and it still tastes great.

Ingredients

Original recipe (1X) yields 8 servings

  • 6 medium potatoes

  • ¼ cup unsalted butter

  • 1 (10.5 ounce) can condensed cream of mushroom soup

  • 1 pint sour cream

  • 1 ½ cups shredded Cheddar cheese

  • cup chopped green onion

  • ½ cup crushed cornflakes cereal

  • 2 tablespoons unsalted butter, melted

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2 1/2-quart casserole dish.

  2. Fill a large pot with lightly salted water and bring to a boil. Add whole unpeeled potatoes and cook until tender, 25 to 30 minutes. Transfer potatoes to a cutting board; discard water. When cool enough to handle, peel potatoes and grate into a medium bowl.

  3. Melt 1/4 cup butter in a large skillet over medium heat. Stir in soup; cook until begins to bubble. Remove from stove; stir in sour cream, Cheddar cheese, and green onion, then stir in potatoes. Pour mixture into the prepared casserole dish.

  4. Shake cornflake crumbs and 2 tablespoons melted butter together in a resealable plastic bag until combined. Sprinkle over top of casserole.

  5. Bake in the preheated oven for 45 minutes.
