Cabbage and Smoked Sausage Soup

Even kids who don't care for vegetable soup may enjoy this cabbage and smoked sausage soup. Very good flavor. Sometimes I use crushed tomatoes with garlic, onion, or basil now that they're available. Turkey smoked sausage is great in this recipe!

Ingredients

  • 1 tablespoon vegetable oil

  • 1 onion, chopped

  • 1 (28 ounce) can crushed tomatoes

  • 3 cups water

  • 1 head cabbage, cored and coarsely chopped

  • 1 pound smoked sausage, sliced

  • 3 carrots, sliced

  • 3 stalks celery, sliced

  • 1 (15 ounce) can red beans, with liquid

  • 1 (8 ounce) can tomato sauce

  • cup uncooked long-grain white rice

  • 2 cubes chicken bouillon

  • 1 bay leaf

  • ½ teaspoon crushed dried thyme

  • salt to taste

Directions

  1. Heat vegetable oil in a large pot over medium heat. Add onion; cook until lightly browned. Add crushed tomatoes, water, cabbage, sausage, carrots, celery, beans, tomato sauce, and rice. Add bouillon; stir until dissolved. Season with bay leaf, thyme, and salt. Bring to a boil. Reduce heat to low; cook until vegetables are tender and rice is cooked, at least 1 hour.
