Ingredients

Original recipe (1X) yields 6 servings

  • 1 tablespoon unsalted butter

  • 1 tablespoon olive oil

  • ¼ cup finely chopped onion

  • 2 tablespoons chopped garlic

  • 1 cup tomato sauce

  • 15 cherry tomatoes, halved

  • ½ cup chopped green olives

  • ¼ cup deli-marinated Italian vegetable salad, drained and coarsely chopped

  • ground black pepper to taste

  • 1 pinch cayenne pepper

  • 1 pinch paprika

  • 6 (4 ounce) cod fillets

Directions

  1. Heat butter and olive oil in a large skillet over medium heat. Add onions and garlic, and cook until onions are slightly tender, being careful not to burn garlic.

  2. Add tomato sauce and cherry tomatoes. Bring to a simmer. Stir in green olives and marinated vegetables. Season with black pepper, cayenne pepper, and paprika.

  3. Add cod fillets and cook over medium heat until fillets easily flake with a fork, 5 to 8 minutes. Serve immediately.
