These peach muffins are so good and taste just like peach cobbler. I came up with this recipe in my hurry to use up some fresh peaches.

Ingredients

Original recipe (1X) yields 16 servings

  • 3 cups all-purpose flour

  • 1 tablespoon ground cinnamon

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 2 cups white sugar

  • 1 ¼ cups vegetable oil

  • 3 large eggs, lightly beaten

  • 2 cups peeled, pitted, and chopped peaches

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease 16 muffin cups or line with paper liners.

  2. Combine flour, cinnamon, baking soda, and salt in a large bowl. Beat together sugar, oil, and eggs in a separate bowl. Stir into flour mixture until moist. Fold in peaches. Spoon into the prepared muffin cups.

  3. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes. Cool for 10 minutes before turning out onto wire racks to cool completely.

Recipe Tip

You can also pour the batter into two loaf pans and bake for 1 hour.
