This peach cake recipe belonged to my mother, and we enjoy it when fresh summer peaches are in season, but you can make it anytime using canned peaches.

Ingredients

Original recipe (1X) yields 24 servings

  • 3 large eggs, beaten

  • 1 ¾ cups white sugar

  • 1 cup vegetable oil

  • 2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon baking soda

  • 2 cups fresh peaches - peeled, pitted, and sliced

  • ½ cup chopped pecans

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch pan.

  2. Combine eggs, sugar, and oil in a large bowl; stir in flour, salt, cinnamon, and baking soda. Fold in peaches and pecans; pour cake batter into prepared pan.

  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes.
