Original recipe (1X) yields 6 servings 4 russet potatoes, peeled and cubed 3 large eggs 1 (10 ounce) can mixed vegetables, drained Dressing: ½ cup mayonnaise 5 tablespoons chopped pimiento-stuffed olives ½ tablespoon fresh lemon juice ½ teaspoon ground black pepper, or more to taste ½ teaspoon ground mustard ½ teaspoon dried dill weed salt to taste Directions Bring a large pot of lightly salted water to a boil. Cook potatoes in boiling water until tender yet firm, about 15 minutes. Drain and place in a large serving bowl. Place eggs in a saucepan and cover with cold water.
