Original recipe (1X) yields 10 servings 1 pound bulk pork sausage 1 tablespoon olive oil 1 (10 ounce) package fresh spinach 1 green bell pepper, chopped 1 Roma tomato, chopped ½ cup chopped onion 1 ½ cups shredded Cheddar cheese 2 (2.5 ounce) packages real bacon bits 12 large eggs 1 teaspoon dried oregano 1 teaspoon dried basil 1 teaspoon sea salt ½ teaspoon ground black pepper ½ teaspoon garlic powder Directions Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan. Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Meanwhile, heat oil in another skillet over medium heat. Add spinach and saute until just wilted, about 2 minutes. Remove from heat.
