Ingredients

Original recipe (1X) yields 2 servings

  • 1 bunch kale, cut into bite-sized pieces

  • 1 lemon, juiced

  • 1 small apple, chopped

  • 1 tablespoon toasted almonds, chopped, or to taste

  • ½ tablespoon honey, or to taste

  • 1 drizzle olive oil

  • salt and ground black pepper to taste

Directions

  1. Massage kale with lemon juice in a large bowl until thoroughly mixed together, about 2 minutes. Add chopped apple and toasted almonds; toss to combine.

  2. Mix honey and olive oil together in a separate bowl. Drizzle mixture on salad. Season with salt and pepper. Serve.
