This grown-up sherbet recipe gets tropical sweetness from fresh pineapple and a little boozy kick from rum.

Ingredients

Original recipe (1X) yields 4 servings

  • 1 very ripe pineapple, peeled, cored, and cut into chunks

  • 2 tablespoons brown sugar

  • 2 tablespoons rum

  • ¼ cup heavy cream

Directions

  1. Purée pineapple chunks in a blender until very smooth; transfer to a bowl. Stir in brown sugar and rum, then stir in heavy cream. Pour sherbet into a metal dish; freeze for about 3 hours.

Cook's Notes:

Try using Kirsch (cherry brandy) in place of rum, if you prefer.

Sherbet should be soft and smooth when served; if it becomes too hard, purée again in blender.
