Ingredients

Original recipe (1X) yields 8 servings

  • 1 pineapple - peeled, cored, and cut into chunks

  • 1 (6 ounce) can pineapple juice

  • ¾ cup white sugar

  • 2 tablespoons lime juice

  • 1 tablespoon vodka

  • 2 leaves fresh mint

Directions

  1. Place pineapple, pineapple juice, sugar, lime juice, vodka, and mint in a food processor and process until smooth.

  2. Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container; put in the freezer for at least 6 hours before serving so it can firm up.

Cook's Notes:

The vodka helps keep the sorbet soft enough to scoop in the freezer without adding flavor. If you'd like, add a different type of alcohol - experiment with different flavors!

Use an additional tablespoon of lime juice if you like your sorbet a bit more sour.
