Original recipe (1X) yields 8 servings 1 pound small mushrooms, stemmed 4 tablespoons extra-virgin olive oil 3 tablespoons white wine vinegar ½ red onion, finely chopped 2 tablespoons finely chopped fresh oregano 2 tablespoons finely chopped fresh thyme 2 cloves garlic cloves, pressed ½ teaspoon salt ½ teaspoon freshly ground black pepper Directions Bring a large pot of lightly salted water to a boil. Add mushrooms and cook until softened, about 10 minutes. Drain and set aside to cool.
