Ingredients

Original recipe (1X) yields 6 servings

  • 1 cup finely chopped fresh pineapple

  • ¼ cup finely chopped red onion

  • ¼ cup red bell pepper, chopped

  • 1 jalapeño  pepper, seeded and minced

  • 1 tablespoon finely chopped fresh cilantro

  • 1 tablespoon lime juice

  • 1 clove garlic, minced (Optional)

  • ½ teaspoon white sugar

  • ½ teaspoon salt

Directions

  1. Mix pineapple, red onion, bell pepper, jalapeño, cilantro, lime juice, garlic, sugar, and salt together in a bowl until combined; cover and refrigerate for 1 hour so flavors can meld.

Cook’s Note

You can substitute papaya, mango, or even yellow bell pepper for the pineapple.
