Original recipe (1X) yields 6 servings cooking spray 1 cup coarsely chopped mushrooms ¼ cup chopped onion 1 (10 ounce) package frozen chopped spinach, thawed and drained ½ cup shredded part-skim mozzarella cheese, divided ¼ cup grated Parmesan cheese 1 pound 99%-lean ground turkey breast ¾ cup Quaker Oats (Quick or Old Fashioned, uncooked) ½ cup fat-free milk 1 egg white, lightly beaten 1 teaspoon dried Italian seasoning blend ½ teaspoon salt (Optional) ¼ teaspoon black pepper Directions Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a medium skillet with cooking spray and place over medium-low heat. Cook and stir mushrooms and onion in the hot skillet until onion is tender, about 4 minutes. Remove from heat.
